Sourdough Rustic Bread
This bread is our daily eater at home, and it's goes by a lot of names out there: hearth bread, artisan loaf, crusty bread, country loaf. Ours might will vary a little week to week or season to season, but it is always a versatile, mostly-white, 100% naturally fermented, not-too-sour sourdough loaf (no nuts, seeds, or add-ins).
We like being the only link in the chain between you and the source of your wheat, so we work directly with the miller to source all our flours. Our house loaf is a great way for all of us to support small growers & millers, as well as appreciate the flavors of some really cool, unique grains. We toss in a handful for each loaf- just enough to make it interesting but not enough to take over. Usually these loaves are all wheat, but sometimes they might have rye, spelt, corn or other grain- please ask what is in this weeks loaf if you have food allergies or just think it's cool and want to know! We believe making bread this way is the truest form of farm-to-table and naturally fermented products; real food SHOULD always taste a little different. We aren't making factory food here and nothing is forever. There is only today. Which is delightful & unique. Like this loaf.
Ingredients: 100% organic and/or micro-miller sourced flour (wheat, rye, barley, rice, buckwheat, and/or corn), well water, our house sourdough starter (made with Organic Central Milling High Mountain + Barton Springs Mill whole wheat flours + water), Redmond Real Salt. May be stenciled with food grade activated charcoal.
